"Shelf-life was discussed in last month's FE. The article suggested beginning shelf-life studies of your product right now. Your findings should enable you to make some good decisions but you also need to be aware of the time it takes and the process necessary to get your product into the hands, and stomachs, of the consumer. Generally, when we make something in our own kitchen we eat it either that day or very soon after. But when you are selling your product commercially, it needs to stand the test of time."
